How long did it take for you to land your job at Saute: world bistro?

6 months. The building was not ready and I had to wait until the owners were ready. I met with them in April 08 and began developing the menu and kitchen flow, but was not officially hired until Oct. 08

What are the most challenging aspects of your job at Saute: world bistro?

Getting everyone on board with the same ideas of running a restaurant the "proper way". Developing systems for a laissez-faire style of ownership. Opening with a short staff and trying really hard to make a go of it with little or no time.
