      <description>Since you are self-employed, lunch can be whatever you want it to be, Chinese? Mexican? Peanut Butter and Jelly? It's up to you!  But when you first arrive at a storm site, it might be PB and J if the electricity is out for miles around....For example, during Hurricane Katrina, the local fast food places were down for the first month due to limited electricity.. I was aware of this and survived on snack bars, cereal and PB and crackers until "civilization" by way of electricity returned, but it's usually not that bad..</description>
